Chicken Thighs and bacon pie!

Today was such a lazy day!! I did manage to make breakfast and dinner though!! For breakfast I got creative! I wanted to use crescent rolls I had left so decided to make a pie! All I did was press the crescent rolls into a greased pie dish. I then beat like six eggs, added cheese, and some chopped up ham. I poured this into the pie dish and then laid the bacon across. the top! I cooked it on 350 for probably 30-45 minutes. Just had to judge it based on the bacon being cooked.  It felt like forever I think because I was starving!!!



For dinner I really did not want to move from the couch, but had chicken thighs that were calling my name. Have I mentioned how much I love chicken thighs! Hahaha! Well I went with one of my favorites from Momma's recipes!! Paprika Chicken!! When I put the plate in front of Chris he said it was one of his favorite dishes, mine as well!!! Here is what ya do.

Paprika Chicken

4 chicken thighs (it's better if they are boneless and skinless, but either way)
1/3c butter
1/3c flour
1T paprika
1/2t pepper
1t salt
1 small onion, chopped
3c chicken stock
1c sour cream

First things first. Mix the flour, paprika, salt, and pepper in a bowl. Melt butter in a skillet on the stove. Coat pieces of chicken in flour mix then add to skillet. Brown on both sides about 10/15 minutes. Add your onion to the skillet. Then add 1-1/2cups of the chicken broth. Cover and simmer for 30 minutes.

After 30 minutes take the chicken out. I usually put the oven on warm and stick them in the oven. Then add the rest of the chicken broth and the sour cream to the juices. You can add more sour cream to make it more luscious. I also add a little bit of flour to thicken it up. Let it heat up. I then make some dumplings. Use the direction for biscuits on the box. Mine was 1/3 c milk with 1-1/4c baking mix/biscuit mix. Then roll them in little balls and drop in your sauce mixture and let them cook for five minutes. I have to have these every time I make this. I will not make it unless I can make these dumplings!! Enjoy!!!
