Fabulous Fried Friday!!!

FRIDAY!!!!!! Thank goodness!! It felt like the longest work week ever! Probably because it was my first full week back after having a little over two weeks off. Friday's have usually been go out to eat nights or pizza night, but lately Chris and I decided we needed to stay in and try and save money so we can save to buy a house, and Chris a new vehicle. Yesterday I asked Chris what he wanted and he said fried chicken.... just like dad right mom, those men love their fried chicken! Well I HATE making fried chicken, but figured since it was a Friday I'd give it a shot and put the 90's Pandora station on as I cook. I surfed Pinterest last night and found a recipe for oven fried chicken. I thought to myself, well since I'm making friend chicken I mine as well go with the fattening food theme.  I have been wanting to make another recipe I found on Pinterest, fried mash potatos.  The recipe raved about how awesome they were and I was some what skeptical, but let me tell you, OHHHHH MY this was the best meal ever, or at least felt like it tonight!!!  I also had to make a stop at Kroger on my way home from work to pick up milk, well of course I did not just get milk, did a little coupon shopping!! Also everytime I go to Kroger I check and see if the Green Giant Steamers are on sale (Regular Price $1.99), well they were on sale 10 for 10 and I had a buy three get .60 off (which is really $1.20 off since Kroger doubles coupons)! We love the Shoepeg White Corn in Butter Sauce, a must try for sure!!! Okay, okay, here is the recipe already!

Garlic Oven Fried Chicken

1/3c butter, melted
2T minced garlic ( I used 3 large cloves--I LOVE Garlic)
2t garlic powder, divided ( again I LOVE Garlic and did 3t divided)
1/2t salt
3/4c Italian Bread Crumbs
1/2c Cheddar Cheese, finely grated (I just used shredded cheese)
1/4c Parmesan Cheese, finely grated (again I used the jar parmesan)
1/2t pepper
4 chicken breast (I had three huge ones)
1c Shredded Cheddar or Mozerella to top at end (Optional, of course I used!)

In bowl number one mix butter, garlic, garlic powder, and salt

In bowl number two mix bread crumbs, 1/2c cheddar cheese, parmesan cheese, other half of garlic powder and pepper. 

Dip in butter mix (mine was alittle thick because of all the garlic! but totally worked), then in bread crumbs.  The recipe said to place in greased dish or place on wire rack on top of dish for a crisp finish... which I did. Bake 350 for 30-45 mintues depending on the thickness.  I did mine for 45 because mine were pretty thick and that was perfect.  Top with extra cheddar or mozerella for the last five minutes. SOOOOOO goood!!!

Fried Mashed Potatos

3c stiff seasoned mashed potato, Cold ( I had a pouch of Betty Crocker instant Loaded Mashed Potatos)
2 Eggs
1/2c diced green onion
1/2c bacon ( I did not use this since my potatos were "loaded mashed potatos)
1c shredded cheddar cheese
1 & 1/2c panko

After your potatos have cooled, I let mine cool 30 mintues, stir in egg diced green onion, bacon, and cheese. Shape into balls, then roll in panko.  The panko made them sooo crispy and delicious!!!! Fry them in oil til browned.  I mixed mayo and garlic powder up and dipped them in that... it was again amazing!!!

As you can tell by the picture it was a lot of food.  It was soo good, but we have a lot of left overs now!!! It was soo good not only did Martha make an apperance so did Martha Jr.!!! I also have included a picture of my bestest animal friend Buddy, my 2 year old golden retriever! Mom you jinxed me, Buddy came in with his front paws all muddy and his nose!!! I had already cleaned up his nose but note the paws!!! I almost want the snow back!!! I hope everyone had a great week!! I already have plans of meals for the weekend so stay tune!!!

  1. Kate I can't let dad read this post I will not hear the end of it. I will have to make fried chicken this weekend . It does sound delicious but I do hate making it. Thanks. The fried potatoes do sound yummy also. Better make something to unclog the arteries. Buddy looks guilty .
