Pork and Bananas

Bet I got your attention after that title!! Well let me explain!! We'll start with the banana part. I am always looking for breakfast recipes and came across Oatmeal Banana Pancakes. I have never liked oatmeal for breakfast even after numerous attempts of convincing myself to try it. This may be my new favorite breakfast recipes!! I made half of the recipe and made enough for two days for me.  The picture I am posting does not do it justice. Try it you won't be disappointed!!

Oatmeal Banana Pancakes

1 & 1/2 c milk
1/3 c butter
1 & 1/2 c quick oats
1/3 c flour
1 & 1/2 t flour
1/2 t salt
1 TBSP sugar
1/4 t cinnamon
2 eggs separated
2 bananas peeled and dices

Heat milk and butter until bubbles form. Remove from heat and stir in oats. Let cool slighty. Whisk in egg yolks, then add flour.  Mix flour, baking powder, salt, sugar, cinnamon in bowl til blended. Add to mixture.

Beat egg whites til stiff peaks form. Fold in egg whites and bananas.  When you pour it into your griddle you will need to spread it out since it is kinda thick. Cook as you would a pancake and add syrup or honey!!! Sooo yummy started the day off with a smile!

Now for the pork, which was for dinner and some what disappointing. I found the recipe on Pinterest and decided to try it because it was similar to a chicken recipe from mommas recipes...or so I thought. I really changed this one up and thought it was better after that. Chris gave it approval and would eat it again.

Oven Baked Pork Chops

1c flour
4t paprika
3t salt
1/2 t pepper
1/2 c butter--- I know thats alot
1 medium onion chopped
1/2 c flour
2c milk
1 lemon juiced

Mixed first four ingredients in bowl and and add pork to cover fully. Add butter to skillet, add pork and brown. Remove pork to dish... at this point I was still on board. Add onion to skillet and saute for a few minutes add The half cup flour and mix up the best you can *was hard to do because it was thick. Then whisk in milk heat til thick. Remove from heat add lemon juice. Pour on pork bake 350 30 min.

Ok SOOO wayyy too much flour in the sauce and it didnt have much flavor. I did not pour it over the chops and cook it because didnt like the sauce. Here comes the adventure. .. I added garlic powder and Italian seasoning... still ehh... Then decided to add dip the pork in the sauce then dip it in Italian style bread crumbs mixed with Parmesan cheese. I then  fried it up in a skillet. This was much better!! After this adventure... time to open my dads homemade Barbara wine!! Yummm!

    Very interesting pork recipe. good job in sticking with it. You salvaged the dinner. The end result looks appetizing. the pancakes on the other hand sound yummy but don't look as pretty. I WILL try the pancakes because I like bananas and oatmeal. I'll let ya know. Keep on cookin'!!!!
