While preparing dinner tonight and mixing it in a purple bowl I had a flash back to my undergraduate years at Capital University and reflect on how much my life has changed, and how many obstacles Ive overcome/accomplished (For those of you that do not know purple was one of Capitals colors). Thurdays were referred to as "thirsty thursday" because everyone would go out drinking! At that time in my life cooking was the furthest from my mind! We would anxiously await class to be over to go home and start getting ready and "pregaming" before heading out.
At times, Im sure eating, not even cooking, but just eating didn't even cross our minds. Thursdays no...wait Mondays-Thursdays, consists of planning what I am cooking for the next day, week, and spending the evening watching Jeopardy and Wheel of Fortune!! Wow times have changed, but definitely for the better! The recipe tonight comes from a cookbook I got from my parents for Christmas: Ready, Set, Eat: 200 Quick & Delicious Dinner Recipes. This cook book is great for me especially by Thursdays!! This meal was light, refreshing, and delicious. I will provide the full recipe, but i only had three thick pieces of deli ham do I improvised with the amounts . Hula Ham Wraps.
Hula Ham Wraps
3/4lb. Deli ham, sliced into strips
20-oz can pineapple tidbits, drained
2 carrots, peeled and shredded
1 head Nappa Cabbage shredded( I used a bag of tri-color coleslaw)
1c sour cream
1/4c white vinegar
1t salt
1/4t pepper
12 flour tortillas
**I added shredded cheader cheese
Mix First 4 in one bowl, rest in another. Pour s.cream mix over ham mix and toss. Wrap in tortilla. ENJOY!!
My picture includes pretzel bites stuffed with cheese...it was a coupon deal...and Chris request.... they were not good either Lol! That brings up something else to mention. I am a couponer, and crafter... I will share these experiences as well.
Yes you certainly have come a long way. Capital days have given you some great memories . I'm sure the hula ham rolls were delicious just not very photogenic. It's funny how life changes as the years pass. Enjoy each and everyday, you're right where you should be right now! Keep on cookin'!!!!
