100th Post!!! Marinaded grilled chicken, radish salad, and new way for corn on the cobb

Mannnnn it was hot today!! Of course he have no AC in this house, but thankfully a friend last year gave us a window unit for our bedroom so at least we have that at night! I cannot wait to move!! I did not realize until just now that this is my 100th blog post!! That just seems crazy to me!! 100 great recipes that is for sure!!! Today since it was hot and muggy I of course planned to use the grill.  I did a marinade, and then tried out a radish salad recipe that caught my eye because it was pretty colors!

Chicken Marinade

You can do all of this in a 2c measuring cup.

1/2c olive oil
1t salt
1/2t pepper
1/2t paprika
1/2t cumin
1/4t cayenne pepper
2-3 garlic cloves minced
3 T onion chopped
1/2c fresh parsley or 1 to 2t dried
1-1/2cups of beer (12 oz can)


Mix the ingredients in order in the measuring cup mixing up every so often. Slowly add the beer, because it will foam some. Pour over chicken and marinade. It was a simple and tasty recipe.

So with my grilled chicken I made some red skin potatoes. I also bought corn on the Cobb, and saw this recipe on pinterst for a different way to cook the corn. All you do is fill your pot with water then add 1cup of milk and a stick of salted butter. I don't know if that made much of a difference, but the corn was sooooo good!!!

Okay so prior to dinner I wanted to try this radish recipe I saw online. I am not a huge fan of radish just by themselves but this looked yummy and healthy! Okay so here it is.



Radish Salad

Radishes
1/4c cilantro minced
1/2c red onion diced
3T fresh lime juice
1T olive oil
2T orange juice
1t sugar
salt and pepper

Okay so first I shredded up my radishes. I used the big hole end of the cheese grater thingy. haha. You can pry slice them however you want but this was PERFECT! I then chopped my onion and minced my cilantro. Put this in a bowl and set aside. In another bowl whisk together the lime juice, olive oil, orange juice, and sugar together until sugar is dissolved. Then you pour the juice on the radishes and mix up. I did not use the whole pound of radishes the recipe called for so I did not add all the juice to it, just enough for it to be coated. I saved the rest incase I wanted to make more later. You need to refridgerate for at least an hour. Then enjoy. I was surprised how yummy this was!!!  Be daring try it out!!! Radishes are on sale!!
