Chocolate-banana oat pancakes & Grilled BBQ Kielbasa

Last night I prepped for breakfast. I went through all my "likes" on pinterest and discovered a pancake one I wanted to try and man it was soooo yummmo!!

Chocolate-banana oatmeal pancake

1 ripe banana mashed
1t baking powder
1 egg
Pinch salt
1/2t vanilla
1T butter softened
1T oil
3T milk
1/2c quick oats
1/4c flour
3T chocolate chips

Mash the bananas with baking powder. Add rest and mix just until combined. Fold in chips. Perfect way to start the morning, especially since I was supposed to testify in court! Who doesn't love chocolate and banana!!

Turns out I did not have to testify! But I was planning for an easy cooking day since we had training at the gym today til 8! Soo I decided on grilled kielbasa..which I absolutely love. Well wanted to spice it up just a bit and OMG sooooooooooo goood. I cant express how much I love this recipe.  AND its easy.

BBQ Grilled Kielbasa

1/3c BBQ sauce
1/4c brown sugar
3T cider vinegar
Mix up and coat kielbasa.  Grill away!!

Flounder

This week seems like forever! Tonight got home later then normal so wanted quick. I had saved some flounder recipes and tried one out. Very yummy and easy.

Baked Parmesan flounder

1/2c bread crumbs
1/2c parmesan cheese
Mix together

1/2c mayo
1t worscheshire sauce
Mix together. Dip fish in mix then in crumb mix. Bake 375 20 minutes. Enjoy!!

Cinnamon Roll waffles

Last night the girls said something about cinnamon roll waffles. Well didnt have any cinnamon rolls so decided to whip up my own recipe.  They were soooo yummy!!!

Cinnamon Roll Waffles

Batter
1-3/4c flour
2T sugar
1t baking powder
1/2t baking soda
1/4t salt
2 eggs
2c milk
1/4c oil
1t vanilla

Cinnamon topping
1/2c butter melted
3/4c brown sugar
1T cinnamon
Once the waffle is cooked spread this on top the the cream cheese part

Cream cheese topping
4T butter
2 oz cream cheese
Softened
3/4c powdered sugar
1t vanilla
1t milk

Soooo good!!! Ava is eating on for dinner hahaha! Kid approved!! We also tried the bacon wrapped in pancake batter. This was eh ok.

Carmel Grapples

Friday!!!! Yesss busy three days of work!! I felt like I worked five days thats how busy I was!! We went to pick up chris' daughter and friend then headed to the parentals!! Since there anniversary was this week, i made a sweet treat and everyone loved it!! I am calling them carmel grapples because everyone said it taste like a carmel apple. Heres how to make em.

Carmel Grapple

Grapes
Vanilla candy coating
Any kind of nuts chopped

Cook your coating as directed on pkg. Poke tooth pick in grape. Dip in candy coating then nut mix.

Grilled Talapia

OHHHH my! What a day!! So busy at work then just continued rigjt to the gym!! Also finally got my call for a down payment assistance program!!! Cant believe I am really going to buy a house!!! Im sooo excited. Also today had to prepare for this weekend heading to moms with buddy, chris, his daughter and her friend! Ahhhh!! Its okay relaxation will be all weekend in paradise (aka-mom&dadd house)!! So needed a real quick recipe today and of course I had no idea what to do with talapia.  Erin and I brainstormed but nothing. So foumd one rather quickly when I got home and ot was only 6 minutes one the grill!!! Chris' comment to me was " I could eat this everyday. " wahhhhooo!!!!

Grilled talapia

3/4c mayo
1t steak sauce
2T parmesan cheese
1t lime juice.
Mix up. Spread on both sides of fish and grill 3 minutes a side!!! Yummyyy with my roasted veggies!!

Burrito casserole

Today I wanted to make ground turkey so found a new recipe on pinterest.  It is a burrito casserole. 

Burrito Casserole

1lb ground turkey
1 medium onion diced
1 can refried beans
1 pkg taco seasoning
1can cream of mushroom
1/2c sour cream
Shredded cheese
Tortilas

Brown turkey with onion. Drain. Add beans and taco seasoning. Mix up. In separate bowl mix soup and sour cream.  spread half soup mix on casserole dish. Tear up tortillas til u cover the soup mix. Spoon meat mixture over. This part is tricky because its clumpy but if you spoon small lumps youll be fine. Top with cheese and repeat layer. Bake 350 20-30 minutes!

So warning, picture is not that pretty but man this is sooooo good!!! Definitely a keeper!!!

Lemon Dill Pasta Salad and Raspberry Coconut Cream Pie!! YUMMM

I'm back in action!!! We went to Rock on the Range for the past three days so all we have done was sleep, wake up, and go to the concert all day!! It was a great time, but man am I thankful I have Monday's off and took Tuesday off! Had to get all my grocery shopping and cleaning done today! For dinner since I was running around all day, I decided to go with something easy. I bought bacon cheddar bratwursts. They were yummy! To go with them I decided to take a stab at a new pasta salad. I found a dressing recipe that I wanted to make so I just went with it!

Lemon Dill Pasta Salad

1/2c mayo
1 heaping T sour cream
Fresh chopped Dill, however much you want
1/4c lemon juice (i put alilttle bit less then 1/4c)
1/2t salt
I also added a shake of garlic salt and a shake of onion powder and wallo!! Whisk it together. I then sliced up cucumbers, peas, and green onion. I mixed it all up and sprinkled with parmesan cheese. I probably would have added more veggies, but we know Chris is not a huge fan or veggies so this is what he would eat! It was VERYYYY good! Looking forward to eating this the rest of the week!!

I also was browsing through my Simple & Delicious magazines today and found this recipe for coconut cream pie with raspberries!! OMG sold! I have been wanting this pie forever so I decided to make it for myself, well a baby one at least since, yup you guessed it, Chrissy does not like coconut!!! Soo here is how you make it and it was sooo quick and easy!!!

Raspberry Coconut Cream Pie

(This is the full recipe)
Graham Cracker crust (I made my own or buy your own.)
1/2c white chocolate chips melted
2pk vanilla pudding
1/2c coconut
2c milk
2c whipped topping

Spread the melted chips on top of the graham cracker crust.
In bowl whisk the milk and pudding. Add coconut
Fold in Whipped topping
Spread half the mixture on the crust. Add Raspberries.
Top with rest of topping and enjoy!!!!!!

Paremsan honey pork roast and Peanut Butter Cupcakes!!!


Today I had to work since Im off Friday for Rock on the Range!So I wanted some thing easy to cook and preferably not in the oven since it was 88 degrees today!!  So I used the crock pot! Turned out veryyyy yummy.

Parmesan honey pork roast

Pork roast
2/3c Parmesan cheese
1/2c honey
3T soy sauce
2-3 cloves garlic minced
2T dried basil
2T olive oil
1/2t salt
Spray crock pot. Add roast
Pour mix over and cook on low 7hrs. It was very good!! Paired with a salad!!!



Okay so I know I said earlier I did not want to use my oven because it was soo hot out, well I have not baked anything in a while, and today when I walked into the Columbus office I was asked if I brought any goodies. I sadly said no. SOOOO that was one reason I wanted to make some goodies and two I was bored LOL so I went for it. I have not made anything peanut butter so that was it.

Peanut Butter Chocolate Chip Cupcakes

Cupcakes:
1c flour
1t baking powder
1/4t salt
6T butter room temp
1/2c brown sugar
1/2c sugar
3/4c peanut butter
2 eggs
1t vanilla
1/2c milk
chocolate chips

Mix the flour, baking powder and salt in bowl. In separate bowl mix vanilla and milk. In another bowl mix the butter, brown sugar, and sugar until smooth. Add in egg and beat until combine. Add peanut butter and beat until smooth. Add 1/2 of the flour and mix until combined. Add the milk mixture, then rest of flour mixture. Add your chocolate chips in! Yummyyy already! Preaheat oven to 350. When you put the muffins in the oven turn town to 325. Bake 22 minutes for big ones 12 for little ones. I guess turning the temp down is supposed make them turn out better???!! I dunno tried it out!

Frosting:

3/4 cup of butter room temp
1/2c powdered sugar
1/2t salt
1c peanut butter
1/2t vanilla
1/c milk.

Combine milk and vanilla, set aside. Combine powdered sugar, and salt, set aside. Beat the butter and peanut butter. Add 1/2 sugar mix, then 1/2 milk. Repeat until combined. I added some more powdered sugar to make it a little bit thicker. Wooollalaa!! YummmmOOO

Dessert and fishhhh

Today was a good day despite the rain we had the majority of the day. We went house hunting with a relator...found one okay one, but going to hunt again in two weeks! After houses hit the gym then lunch time. For lunch I made talapia. All I did was coat both sides with olive oil, then in a bowl I mixed parmesan cheese, bread crumbs, garlic powder, and salt and pepper. Spread on both sides baked at 400 10 minutes.  Very good and quick. Of course had my roasted veggies and made a pasta side.

Dinner I met with my friend Shauna at a place by me called Pies Gourmet Pizza Bistro. I ♥ this place. They have really fancy food and gourment pizzas. They also had happy hour so we got this cocktail that was fabulous, pear grapefruit fizz yummmm. Sooo we ended up getting, Crispy fried brussel sprouts, cheese bread sticks, and Maple Burbon Bread pudding.  The pudding I had no idea what it was but holy hell it was the best thing ever. It had a scoop of coconut ice creamm too! Soo no dinner cooking toNight im full!!

Bzz Agent

Hey everyone!! Today I wanted to share about the bzz website! Becoming a bzz agent is great!! Lots of free stuff and awesome coupons. All you have to do is go to the website and register.  Then you answer a bunch of surveys. The more surveys you do the better. I did them all and they update them every so often too! You will then get invited to campaigns!! The first one I shared before was silk almond milk. The second invite was Freschetta Gluten-free pizza. OMG soo impressed with it, very good for a frozen, gluten free pizza!! The sauce was great! I also got a pizza cutter with this campaign, free pizza, and two 2$ off coupons.

I also got invited to Choboni, coperstone, and specia K! Ill share them as I try them but tonight Freschetta was awesome!!!

Sour cream Flounder

Im alive!! This week we had left over lasagna I had froze a while back. Yesterday I met a friend for a beer, and chris was sick so just had my roasted veggies!!! Its been such a great week at work, lots of evaluations makes me happy! I also got preapproved for a home loan!! Wahoo sooo thrilled great week!!! Today hit the gym and came hime did veggies and fish. It was flounder on sale this time so I gave it a try. Even sicko Chris said it was real good!!! And wanted seconds!!

Sour cream Flounder

1c sour cream
1/4c parmesan cheese
1t salt
1T paprika
1-2t Tabasco. .I used my chipolte one
Bread crumbs
3T melted butter

Mix first 5 ingredients.  Spray pan with cooking spray. Put fish in. Top with sour cream mix. Top with bread crumbs and pour butter over. Bake 400 20 minutes.  Yummmoooo! Not the prettiest pic but soooo soooo good.

Chicken Ranch Burgers

Where did today go to!! It went by soo fast! I had my clients in Reynoldsburg today, got home, ate lunch, watched a show, then went to the gym and ran three miles, then home to cook dinner and house hunt online! Yesterday I took out my ground chicken so had to make that today, but what to do what to do! I always make the chicken parmesan meatballs but wanted something different. This recipe was soo easy and sooooo yummmy!!! I know everyone is like ehhh or ewww ground chicken (especially my mother), but it is cheap and not bad for you, less grease!

Chicken Ranch Burgers

1lb ground chicken
1/2c panko
1/4c Italian bread crumbs
1t garlic powder
1t minced onion or onion powder
1t seasoning salt (I used my chicken rub/seasoning)
2T dry ranch dressing mix
4T buffalo wing sauce of your choice (I had a buffalo garlic one)

Mix it all up together and form into patties/burgers. I then grilled them on the grill for 5 minutes a side. I did this on foil sprayed with cooking spray to prevent sticking. Topped with American Cheese and then put some ranch dressing on top when it was done and lettuce! Soooo good!

Dr. Pepper Ribs and Kielbasa Sweet Potato Pizza

Today was a great day of cooking and relaxing! Got a great start to the day with a great training session at the gym, then got home to cook a lovely lunch. This recipe came from the Kohl's cookbook again, but Chris of course AGAIN would not like it, so it was just for myself! I just grilled Chris some kielbasa and made him some noodles, but mine was sooo much better!!

Kielbasa, Sweet Potato, and Red Onion Pizza

Pizza Dough (I used crescent rolls for the crust)
1 medium sweet potato peeled and cut into thin half moons
1 medium red onion thinly sliced
1T olive oil
salt and pepper
Kielbasa
Shredded Cheddar Cheese
2 T dijon mustard

Heat oven 400. I spread the crescent roll on the pizza pan then spread Dijon mustard all around the crust. I a mixing bowl toss your sweet potato and onion in olive oil and salt and pepper. Toss in your kielbasa and cheese. I cooked the kielbasa on the grill first and cut it up. Spread mix on top of crescent roll. I only had to bake for like 15 minutes or less. If you use crescent roll watch and see when it starts turning golden brown. Make sure your potato's are sliced thin and you golden!! This was sooo yummy!!! I was soo impressed with this, because I usually do not like dijon mustard or sweet potato's LOL, but this was sooooooo freaking good!

 







Got some work done and a little nap in while dinner was cooking in the crock pot! Ribs!!!! Yummm!!

Dr. Pepper Crock Pot Ribs

1 heaping T paprika
1t onion powder
2t garlic salt
1-2 T brown sugar
1/2t pepper

Mix these ingredients together and spread/rub all over ribs. Place in crock pot on high and cook 30 minutes. After 30 minutes flip ribs and cover with BBQ sauce. Add in 8oz or 1/2 can of dr. pepper. Cook on low for 5 hours, depending on your ribs. I served with corn bread and mashed tators!! Yummmmmmm Great meal! Now catch up on the last three episodes of the Following!

Balsamic Pork and Cabbage

Today on the menu was pork chops! The cookbook I got from kohls had sooo many I wanted to try. One problem...Chris would not eat them, sooo I made traditional pork chops for him...egg, bread crumbs, fry in oil, and bake 6 minutes. Mine was alot prettier, healthier, and yummy!!

Balsamic Pork & Cabbage

Season pork with salt and pepper. Cook in oil 2-3 minutea per side. Place in baking dish and cook 6 minutes on 400. In skillet add 2T oil. Add slices of red onion and cover. Cook for 5 minutes. Add slices of red cabbage 1/2t salt, 1/4t pepper, 2T water, 1/4c balsamic vinegar. Cover and simmer 6 minutes. Fold in fresh chopped parsley. Top with balsmic juices and eat on the side with cabbage mixture! Very yummmyyy!!
