Today was such a great day; however, the cooking plan changed. Last night Chris asked me if I wanted to go to an auction, and of course I was sooo excited! I have not been to an auction in Columbus. Well this auction warehouse happened to be only like five or ten mintues from our house. They were having a bunch of tools, toys, and household items. Well we got there at noon to register and look at all the goodies. They had lots of kitchen stuff so of course I was thrilled! I spotted one of those apple peelers that my mom and dad have, and I have always wanted one but haven't wanted to spend the money! Well as the auction went out the peeler came up and the put it with a tea pot, which I do not have. Chris and I bid five dollars and got both!! What a deal!!! The items at this auction did not get inspected so all items you were taking the chance of it not working, but the apple peeler and tea pot for five bucks heck yes!!! We also got a double toaster for five bucks; however, when we got home one side did not work.... but hey, only five bucks out. We then also bid on this small box of stuff. What caught my eye was a hand strainer. Well we got this for 7.50. It had a shower head, a bunch of air fresheners for the car, a very nice travel mug (kind of like you cool one mom), and a spatula. This was soooo much fun!!! We ended up leaving before the auction was over because we were starving. Chris wanted to take me to a place called Jimmy V's. The reason plans changed was because we did not get to Jimmy V's until 3:30pm. I had planned to roast a whole chicken....but it was already 4:30 when we got home. SOOOO I am not disclosing what goes into this new recipe because I am going to make it tomorrow, but it went along with the theme of this post.... APPLES! Instead of making dinner I made cupcakes, Apple Pie cupcakes with Cinnamon Cream Cheese Frosting.
Apple Pie CupCakes withi Cinnamon Cream Cheese Frosting
1 box Yellow Cake Mix
2 Eggs
1t cinnamon
1c Apple Juice
1 carton of Yoplait Apple Turnover Yogurt
Apple Pie Filling
In bowl beat on low speed everything except the Apple Pie filling for 30seconds. Then beat on Medium for 2minutes. Pour into cupcake holders 2/3 full. Chop up the apple pie filling. I put mine in my food processor. Then put a spoonful on top of the cupcake filing. It will sink down which is what you want. If it does not sink down it will bake over it. (I put too much on some and it did not bake over so only use alittle spoonful). Bake at 325 for 17-19 mintues.
For the frosting, 1 container of Betty Crocker Cream Cheese Frosting, 1t cinnamon, and 1T powder sugar. Beat until fluffy. Once cupcakes are cool frost and Enjoy!!! SOOOOOO yummy!!
I wanted to share another project that I did yesterday. I forgot to add it to yesterdays post. I was bored and saw this on pinterest. I had this lamp shade forever and it was dingy looking so I decided to make this. I learned from making it how to improve the next one, but I love it!!
Hi Kate an auction what fun. Th e cupcakes sound delish. I am also making a whole chicken today of course with 15 cloves of garlic. Wow I'm anxious to read your recipe
