I can't believe that it is Monday evening already! Where did today go! I had to work my once a month job today, then had to take care of some student loan stuff and other bills. By the time I was done with all of that, it was time to go to the gym! Erin and I had our meeting with the trainer today, went well, figured out I have horrible posture and lots of knots! Well that's more motivation to get in shape too! Today for dinner I made Greek gyro pizza. For some reason making this takes me back to a good memory with my lovely brother! It really has nothing to do with the recipe, but brother and I went one time a few years ago to this little Greek restaurant that maybe sat 12 people! I know I tried hummus because Jonny made me, but I cannot recall what I had for my main course. However, we had a glass of Greek wine that we have loved over the years. It is a red wine, not to dry, but just right! It is Nema Kouros. The only place I have seen it to buy is at The Andersons, and always do! That was such a great time I had with my brother. I miss him a lot and wish we were closer as well so we can go out to eat every once in a while and just enjoy each others company. So yes, I thought of my brother while making this meal tonight! On another note, I have never made this for Chris before (and we've been together for over 2 years!) and he has a little bit of Greek in him, so thought I would give it a go. This is sooooooooo good!
Greek Gyro Pizza
1 pkg of refrigerated pizza crust (I buy the Pillsbury thin crust)
Sour Cream
1lb ground Turkey
1T oregano
1t salt
3 garlic cloves minced
Red Onion (sliced thin)
Cucumber (chopped)
Tomato's (chopped; we of course did not use this since were not fans of tomato's)
Black Olives
Mozzarella cheese
1 container of Feta cheese
Spread your crust into a cook sheet and bake on 400 for 7 minutes. While your crust is cooking, cook your ground turkey with garlic. I was sceptical about ground Turkey but this recipe made me think otherwise! Also add your salt and oregano. When your crust is done let it cool slightly. When it is still warm spread some sour cream over the crust, as much as you like. Then sprinkle a little mozzarella cheese. Add the ground turkey. Then you top with all your veggies. Add feta to finish it off! It kinda looks like a mountain but it is great! Then throw it back in the oven and cook for 12-14 minutes. Enjoy!!! As you can see by my picture I divided our pizza since I do not like olives and Chris does not like onion!! Definitely a easy recipe and not to bad for you either!
Ohhh the wine! I'm a big fan now of BLACKSTONE!!! It's very reasonable too (about 8bucks) and have loved every one I have bought! This is a Malbec! Delicious!! Wish I would have had a bottle of that Greek wine but maybe next time!
