Lovely Lasagna

Today was a great day!! I am usually off on Monday's, but today I had a training.  I do not mind going to trainings because they are in our Columbus Office, which is literally 10 minutes from my house. Why you ask do I work in Lancaster, good questions! HAhahah I am trying to work in the Columbus office at least on Fridays but we shall see! February is just going to be a good month I have a feeling! I went this morning prior to the training to get my money order and mail out my independent counseling license application!!! Ahhhhh it's done!! I wanted to give the lady a hug at the post office I was so excited! Now all I have to do is wait until February 14, 2014 and I will be licensed to practice independently in the state of Ohio as a counselor!!! (aka..I will not need a supervisor, and could open my own practice if I wanted!). That was the start to my day! Then the training which I was not thrilled about, may have swayed me a little in the positive direction. After I get my independent license, I just do a few trainings over the next year and will be able to supervisor people...well, this does not appeal to me; however, after today I do not hate the idea :) Okay, okay, so after the training I went to the gym!!! I use to go every day until I got this job, and then decided it was not worth my time with the hours I work....well I talked myself into it with the help of my co-worker Erin, Chris, and my mother!! Thanks guys!!! I had a free pass and decided I am going to do it!! By the time I got home I immediately started my cooking! What better way to continue a great day then cooking!! Erin told me the other day she was wanting to make chicken lasagna, which made me want regular lasagna! I have only made lasagna once, and believe I just wrote the recipe real quick down from my mom. Well I was looking for recipes and it was annoying me because I did not like any of them so said, What the Hey I'll wing it! So here is what I did!!

Lovely Lasagna

1 box of lasagna noodles
Olive Oil
1 can diced tomato's
1 pkg/tube of sausage
1 container of Ricotta Cheese
Mozzarella Cheese
Parm-Cheese
1 Egg
1 onion chopped
3 cloves of garlic minced
1 jar of spaghetti sauce
Fresh spinach
Oregano, Basil, Garlic Powder, salt, pepper, Italian Seasoning

1. Preheat oven to 350. Boil your water then cook your noodles. I added some salt to my water and did the whole box of lasagna noodles.  I cooked them for 9 minutes.  I strained them and put them in a bowl and toss them with some olive oil.

2. Sauce. I browned my sausage with the onion and garlic. I then added my diced tomatoes, and half of the jar of spaghetti sauce.  I also added all the seasonings. I did not measure just did alittle and then tasted and did a little more!

3. Cheese.  I mixed my carton of ricotta with 1/2c Parmesan cheese, 1/2c mozzarella, and 1 egg beated.

4. I then put it all together! First I sprayed my pan with PAM. Then I added a little bit of the spaghetti sauce I had left. (just alittle to coat thinly). I then added a layer of my noodles. Next I added the cheese mix and spread along. I then placed some of the spinach leafs over the cheese mix and topped it with the sauce mixture. I sprinkled this with some mozzarella. Repeat. Then the top I put the rest of the spaghetti sauce still in the jar and sprinkled with Parmesan and Mozzarella. I only used a little bit of sauce on the top too. Bake for 30 minutes covered with foil, then take the foil off the last 15! Enjoy

I must say I either did a REALLY good job with this or REALLY had a taste for lasagna because this was AWESOME!! Also I have sooooooo much left over! I guess I will have to figure out a way to freeze it!! Yummmm!!
